While using electric smokers is easier than charcoal grills or gas grills, there are several intricate steps involved. Since it doesn’t cook at a higher temperature like other units, you’ll need to be patient and spend a couple of hours to get the meat cooked through.
Before we get into the details, it’s critical to understand how an electric smoker works. While it may seem complicated, it is not very difficult to use and there are not too many components involved. The central part is the cooking chamber, where the action takes place.
First, it is essential to season the smoker before you start using it. Residue is often left behind from the manufacturing process, so seasoning ensures that you can burn it off the cooking grates, stainless steel housing or chip tray.
Next, you will need to get hold of a temperature probe. We recommend that you purchase a good quality unit, but if you are not willing to incur additional expense, you can use the one that comes with the smoker.

The short smoking times allow one steam smoke generator to be connected to up to three smoking units (with max. 4 trolleys); this cuts investment costs. Microprocessors control the smoke supply to the three units fully automatically. All units are available with a gas residue cleaning system (catalytic afterburner, filter system or condenser).
The steam smoke is produced through superheated steam, which penetrates the wood chips. All the ingredients for the color and flavor of the chips are extracted and conducted into the chamber as smoked steam.
HOW NOT TO MAKE A MEAT SMOKER
The smoke is not generated by burning wood chips but by superheated steam, which is pressed through the chips absorbing the constituents that give the products their color and flavor. This steam smoking is introduced into the chamber, where it condenses on the product. Smoking times are therefore extremely short.
Steam smoking is very color stable and cannot be washed out, neither with water nor with steam. It is also soot-free and less contaminated with benzo(a)pyrene and other PAHs (hydrocarbon aromatic polymers) than conventional smoking.
